A Very Versatile Paleo Bread Recipe


Hey guys!

So it's been a while since I posted a recipe on here and people seem to love them! Today's is a bread recipe I found that is literally so versatile that you could use it to make many different things from normal bread to cakes!

I have used this to make normal bread when I reallllly fancied eggs benedict one Sunday, I've also added garlic into the mixture when I had my gym pals round for a paleo dinner, and most recently (pictured) I used Maple Syrup and Pecans to make Maple Pecan loaf cake.

It is super easy to make!

Ingredients - plain loaf
6 x Eggs
2 Tablespoons honey (this can be omitted if you are making a savoury recipe)
1/2 Cup of Coconut Oil or Butter (melted)
3/4 Cup of Coconut Flour
1 Teaspoon Baking Powder

How to make
  1. Preheat over to approx 200 degrees C.
  2. In a medium bowl, mix the eggs with the melted oil or butter and honey.
  3. Add in the baking powder and coconut flour until the batter is well mixed and no lumps remain. (Please bear in mind that this mix is supposed to be quite runny and not like a dough consistency!)
  4. Pour the batter into a small, greased loaf tin and bake for approx 40 minutes.
Variations
Garlic Bread - I added in onion powder and garlic granules to the batter and then made garlic butter to spread on when it was still warm.

Maple Pecan - I added maple syrup to the batter and chopped pecans.

It's #bluemonday, and whilst I fortunately feel anything but blue, I know some of you will be needing a little lunchtime perking up...

I love a statement necklace and I think Zara seems to be THE place to get your hands on them. I always get compliments on the various other pieces I have from there and I like how this one pairs black with gold.

Next up is the Pink Boucle Scalloped edge Jacket from Topshop. This is like a tribute to Cher Horowitz/Clueless and I am really rather in love with it! It's definitely made it onto my Birthday list!!

With January being rainy and grey up til' now, I saw this floral bag from River Island and it's so summery and delightfully bright, that I found myself wishing away the months to Summer 2014...

Those of you who follow me on Twitter will know I am a big Mean Girls fan, and whilst this T-shirt is technically from the men's section of ASOS, I want one! It was on sale when I was looking last week aswell, reduced to £12! BARGAIN!

This yellow dress from River Island is probably another case of me fighting against the Winter weather but I love it!

The January Detox: Healthy Living Tea

We are mid way through January and I am sure many of you are detoxing, making resolutions for 2014 to be your fittest and healthiest year yet and generally staying in, saving the pennies and going into a post-Christmas hibernation....

I only drink one coffee a day now in the morning and I have really got into green and herbal teas, the lovely folk over at higher living sent me some of their Sweet Chai and Green Tea Chai to try and I just wanted to tell you all about them!

Sweet Chai wasn't to my taste unfortunately, I really wanted to like it but one of the flavours just wasn't for me. It is a nice tea though and I think if you like the Chai flavour this is very much for you. I can only describe it as like a non-alcoholic spiced rum, so it's a fairly acquired taste!

Green Tea Chai however was right up my street, with a more subtle flavour than the Sweet Chai, it is a really nice warming drink for when you need a mid morning or afternoon pick me up!

You can purchase Higher Living Tea at most larger supermarkets and there are many other flavours available to try!

Getting Organised with Filofax

A New Year always means a new diary for me and as a part of my duties of being a MCRFW Blogger I was very kindly given a Filofax by the lovely people at Paperstone.co.uk.

There is nothing more satisfying than getting a new start, fresh pages and an opportunity to fill your spare time with fun things. It is also a good opportunity to get your hobbies and in my case my blog schedule in order, along with being able to write a list of who I need to email back!

I work full time alongside my Blog, so being able to quickly jot down who I need to ensure I get back to is very important to me.

The New Year's Resolution Post 2014


Firstly, HAPPY NEW YEAR!

I have actually enjoyed the whole reflection and goal setting build up to New Year's this year, as for the first time I have more confidence in my own abilities and dedication to make things happen! I never used to make resolutions as they seemed pointless, but this year I have a few!

I have beauty resolutions, fitness ones, career aspirations and blog goals. I will just give you a few of them as an idea of what I will be focusing on as I can imagine reading what I intend to do this year might be a snore fest...
  1. Look after my skin: As a beauty blogger, I am well aware that using face wipes probably isn't the best thing I can do, but laziness means that I often reach for face wipes to remove my makeup. This year I need to make more of an effort and look after my skin so I don't end up with a face looking like an old boot!
  2. In December 2013 I wore a Herve Leger bandage dress. I LOVED that dress and I'm thinking I would like to own a similar style of dress as a nod to my #adresstoimpress goal last year. I *really* don't have the budget to splash out on a real Herve, but I have seen the Celeb Boutique Dresses and am thinking that can be one of my first goals of 2014 fitness wise. I want to wear another Bandage Dress at my Birthday which is at the end of February!
  3. Last year I attempted a couple of YouTube Videos and I really enjoyed adding a new dimension to my blogging hobby. This year, I want to build upon this and make more vlogs. I like the mish-mash of written and videoed content so this year watch out for more YouTube activity! I promise I will get better.. :)
  4. I am beauty product obsessed, and I am often left with many products taking over my bathroom. I am setting myself the New Year's Challenge of using up these products as otherwise it is just a waste!
  5. Improve my strength: You might laugh but after watching world's strongest man over the past week or so I have decided that I really want to improve my strength. Obviously, I am not about to try and compete in a strong man contest, fat loss and working towards the Manchester 10K are my main fitness goals. I do really want to see what I can do strength wise though. I have quite weirdly strong legs as it is and I suppose I am curious as to how far I can take it!
  6. I want to continue to find nice recipes and use my blog to show that losing weight and living a low carb lifestyle isn't the terrifying concept that people make it out to be. Starting a weightloss transformation can be really intimidating and thinking about what on earth you will eat can sometimes psyche you out of doing it properly. I want to help people who are in the same position that I was last year, not having a clue about how to make a real change to my health. So if that is you, please get in touch. It is something I am very passionate about and I have been fortunate enough to have the support of an amazing trainer and team at the gym I train at. Once you find the resources, you CAN do it.
I will leave it there as like I said, I thing the resolution posts can be a little dry but as I had been asked what I would be working on this year I thought I would give you the headlines! I want big things from 2014 and I know that once I set my mind to do something, I will do it.
