Carb Free Winter Comforts 2...


I thought it was about time that I posted recipe number 2 of my carbless comforts series! 

I am really trying to eat clean at the moment and in order to do that I have to be a bit more creative in the kitchen to avoid certain types of carbs.

I used to be a bread/pasta/potato fiend, so finding replacements for them has been quite the challenge! I am very pleased to say though that genuinely giving up those types of carbs is actually not as hard as you think it might be.

I saw a picture of carrot chips on instagram and thought I would give them a whirl. I can report back that they were really nice and I will definitely be making them again! Steak and chips is a wintery kind of dish and after my trip to the gym earlier on (feeling the fear about getting in my #adresstoimpress!) I decided to make them!

It is one of the simplest things I have made since going carb free! 

Ingredients
Carrots
Oil - I used Walnut Oil
Seasoning - I used a garlic grinder from Tesco and rock salt

How to make
  1. Preheat the oven to 250 degrees.
  2. Peel the carrots and chop into chip sized pieces.
  3. Pop the pieces onto a baking tray and drizzle with oil.
  4. Season.
  5. Cook for 25-30 minutes.
As you will have seen in my earlier post, I am attempting to get into my dream dress by Christmas so I have to make myself nutritious and clean meals to aid my weightloss!

I would definitely recommend this as an easy to prepare meal for all of the family :o)
