Carb Free Winter Comforts 1..

I don't know about you but now that the weather has turned truly pants and it's back to school time of year, I start craving winter foods. This can be a bit tricky when you don't eat carbs like pasta, rice, bread or potatoes.. so I have been doing some research into alternatives!

When I have posted pictures on Twitter I got alot of tweets asking for recipes so I thought I would take to my trusty blog to share them with you.

I am currently working on setting some new fitness goals with my PT Chris in the run up to Christmas, so it's going to be a focus for me to eat clean, dedicate myself to achieving my objectives and also talk about my journey along the way.

So today's recipe I kind of threw together, I didn't follow from a book or anything so you can amend it as you wish!

Carb Free Spaghetti Bolognaise

Shopping List
Coconut Oil
Lean Mince
Chopped Onion
Mushrooms
Peppers
Passata with Basil
Garlic
Italian Herb Mix

Courgettes


Recipe
  1. Warm up the coconut oil in a pan, add in the onions and vegetables, and brown off the beef mince.
  2. Add in the seasoning.
  3. Mix in the passata and leave to cook for approximately 10 minutes until the sauce thickens.
  4. Using a potato peeler, peel the courgettes so that you get ribbons of courgette. You will need to use the harder outside of the courgette not the softer centre. When you have enough ribbons, place them in a pan of boiling water for 3 minutes to soften. Drain away excess water and serve immediately with the bolognaise.
When mixed in with a sauce you really can't tell that it is courgette you are eating and not pasta, so the possibilities are endless for other things you could make with it! You could add in chicken, green beans, sun dried tomatoes and pesto, sausage, tomato and chilli.. anything!
